Meanwhile, mix the zucchini slices with 2 tsp. salt and let sit for 30 minutes. Then, gently squeeze the excess water from the slices and transfer them to a bowl.
On a floured surface, roll the chilled dough into a 1/4-inch thick round. Place the round on a large baking sheet, cover with plastic, and chill again until ready to use.

Heat the water and sugar in a heavy-bottomed saucepan over medium heat, stirring until the sugar is dissolved. Stirring occasionally, continue to cook until the mixture becomes a medium amber color. This should take about 5-6 minutes. Be careful not to let the mixture overcook. It can burn and become bitter.
Remove the sugar mixture from the heat and carefully whisk in the cream mixture. In a small bowl, combine the egg yolks and vanilla. Add the egg yolks to the cream mixture in a slow stream, whisking continuously.
Pour the custard through a fine sieve and divide evenly among the six ramekins. Pour boiling water into the cake pan around the ramekins until it reaches halfway up the sides. Bake until the custards are set around the edges, but still tremble slightly in centers, about 35-40 minutes. Cool completely in the pan, then transfer the custards to the refrigerator and chill until cold, at least 2 hours.
Serve with a sprinkle of sea salt and a dollop of whipped cream.

Quiche is an impressive make-ahead dish that serves well at room temperature. The crust can be made a day or two in advance, and the finished quiche can be stored in the refrigerator for up to four days.
For the crust:
1 1/4 cups all-purpose flour, plus more for dusting

1/2 tsp. salt
1/2 cup unsalted butter, chilled and cubed
1/4 cup ice water
For the filling:
4 large eggs
1/2 cup whole milk
1/2 cup heavy cream
1/4 tsp. salt

Mix the flour, sugar, and salt together in a food processor. Add the cubed butter and pulse until the mixture looks like wet sand with some pea-sized bits of butter. A few larger bits of butter is fine.
Slowly drizzle the ice water into the flour mixture while pulsing the food processor. Stop adding water when the dough comes together easily and begins to form large clumps. The dough will feel moist and a little sticky, but not overly wet.
Place pie dough on a lightly floured work surface. Using floured hands, fold the dough into itself until the flour is fully incorporated into the fats. Form it into a ball and flatten into a 1-inch thick disc. Wrap the disc tightly in plastic wrap and refrigerate for at least 2 hours and up to 5 days before using in a pie recipe.
Roll out the chilled pie dough to 12 inches with a rolling pin. Line a pie plate with the dough, folding the edges around the top of the plate and crimping them to form a thick edge. Line the prepared crust with aluminum foil or parchment paper, and add dry beans or pie weights.
Pre-bake the crust (with the weights) at 400˚F for 15 minutes until the edges of the crust are starting to brown. Remove the crust from the oven and carefully lift the parchment paper (and the weights) out of the pie. Prick holes all around the bottom crust with a fork. Return the pie crust to the oven and bake until the bottom is just beginning to brown, about 7-8 minutes. Remove and cool to room temperature before filling.
Reduce oven temperature to 350°F and whisk the eggs, milk, cream, salt, and pepper together in a medium bowl until uniform. Whisk in the cheddar, bacon, and scallions. Pour into the cooled crust.
Bake the quiche until the center is nearly set, about 45-55 minutes. Don’t overbake. Allow to cool for at least 15 minutes before serving, or serve at room temperature.

Rub the remaining 4 tablespoons of butter onto the surface of the turkey, sprinkle with salt and pepper and put on the rack in the roasting pan. Roast for 30 minutes, then decrease the oven temperature to 350ºF and continue cooking until the skin is brown and crispy, about another hour, until a meat thermometer inserted into the center reaches 155ºF. Place the roulade on a cutting board, cover with foil, and let it rest while you make the gravy.
Set the roasting pan on a burner over medium heat. Whisk the flour into the drippings to form a paste and cook, stirring constantly, until the roux is golden brown, about 3 minutes. Add the chicken stock and cook, whisking constantly, until the gravy thickens, 5 to 7 minutes. Season with salt and pepper. Slice the roulade and serve with gravy.

In a large, heavy skillet, sauté the onion in butter over medium heat until soft, about 5 minutes. Add 1/2 teaspoon salt, 1/4 teaspoon pepper, and nutmeg and continue cooking for one minute. Stir in spinach, remove from heat, and set aside.

Herbed roasted root vegetables (directions)

Preheat oven to 400°F and place a rack in the bottom position. Slice all vegetables into chunks roughly 1 1/2 inches wide, leaving the garlic cloves whole. Place the vegetables into a large mixing bowl. Add 3 tablespoons of the olive oil, fresh thyme leaves, ground cumin, kosher salt, and black pepper. Stir until all vegetables are evenly coated with oil, spices, and herbs.
Brush a large, rimmed baking sheet with the remaining 1 tablespoon olive oil. Spread the vegetables out evenly on the baking sheet. Place the rosemary sprigs on top of the vegetables.
Roast the vegetables in the oven for 15 minutes. Stir them, bringing the chunks from the outside towards the center and the chunks in the center out towards the edges. Return to the oven and continue to roast until the largest chunks are tender and the edges are starting to turn golden/dark, another 15-25 minutes.
Remove the roasted rosemary sprigs and stir the vegetables (some leaves of rosemary will remain, this is good). Season with additional salt and pepper to taste. The roots can be served warm or at room temperature.
Potato and celery root gratin (ingredients)

Potato and celery root gratin (directions)

Preheat oven to 375°F. Butter a 13×9-inch baking dish. In a saucepan over medium heat, warm the olive oil. Add the shallots and thyme and cook for 3 minutes, stirring occasionally. Add the cream, mustard, salt, and pepper and whisk until just blended. Remove from the heat and let cool slightly.
In a large bowl, toss together the potato and celery root slices. Pour the cream mixture over the potato mixture and toss to coat evenly. (Leave some cream for later.) In a small bowl, toss together the Gruyere and Parmesan.
Arrange a layer of potato and celery root slices, slightly overlapping, in the prepared baking dish. Sprinkle with one-third of the cheese mixture. Repeat the layering 2 more times, ending with the cheese. Pour any remaining cream over the top.
Cover loosely with foil and bake for 45 minutes. Remove the foil and continue baking until the top is golden and the vegetables are tender, 30 to 45 minutes more. Let stand for 10 minutes, then sprinkle with the chives and serve.
Turmeric-roasted cauliflower (ingredients)

1 cup sunflower oil
1 tbsp. ground cumin
2 tsp. ground turmeric
2 tsp. crushed red pepper
1/2 tsp. sea salt, plus more to taste

1/4 cup pine nuts
2 tbsp. chopped cilantro
1 tbsp. chopped mint

Preheat oven to 425°F. In a small bowl, combine the oil, cumin, turmeric, crushed red pepper and 1/2 teaspoon of salt.
Divide cauliflower onto 2 large rimmed baking sheets. Drizzle the cauliflower with the spiced oil and toss well to coat; season with salt to taste. Spread the cauliflower in an even layer and bake for about 1 hour, until browned and tender; switch the position of the baking sheets halfway through cooking.
Meanwhile bake the pine nuts for about 1 minute, until toasted. Let cool. Transfer the cauliflower to a large serving bowl. Sprinkle with the pine nuts, cilantro, and mint and serve.
The cauliflower can be roasted and refrigerated overnight; reheat before combining with the pine nuts and herbs.

Simmer for 20-30 minutes, stirring occasionally. Add chicken stock and heavy cream. Using an immersion blender, puree the soup until smooth and heat for another 5-10 minutes until bubbling. Serve hot.

Cook the bacon in a heavy pot over medium heat until crispy. Transfer to a plate and crumble when cool. Heat the butter over medium-low heat in the same pot. Add the onion and cook for 7-8 minutes or until softened. Stir in the garlic and flour and cook for another 2 minutes, stirring occasionally. Add the chicken broth and potatoes and bring to a boil. Reduce heat to medium and cook until the potatoes are tender.
